
Craving Homemade Tortillas? Try this Recipe with a Mexican Twist

Who knew that homemade tortillas could be such a game changer in your kitchen? They are far superior when compared to the store-bought ones, even more so when prepared with bacon fat and a dash of fresh scallions for that extra kick. Don’t let the process overwhelm you; the method is pretty straightforward, and the fun part is in the making. This unique recipe is inspired by Rene Ortiz of La Condesa, graced with a touch by Andrew Zimmern.
You can comfort yourself with the fact that these tortillas, when cooled, can be stored overnight in a plastic bag. Just make sure to reheat before serving to experience the ultimate taste.
The proposed meal to accompany this yummy delight is Grilled Mexican-style leg of lamb. The ingredients include a well-trimmed boneless leg of lamb (3-pound), lime juice, pure New Mexico chile powder, dried oregano, salt, freshly ground black pepper and extra-virgin olive oil. You'll also need some chopped sage, chopped rosemary, plum tomatoes, poblano chiles, red onion and scallions.
To make the Bacon Fat Tortillas, start by whisking all-purpose flour with baking powder and salt. Add in the bacon fat and hands-on mix it until the flour is evenly moist. Follow this by adding water and scallions and stir until you have a dough. Transfer the dough onto a floured work surface and knead it smooth. The next step is to roll it into 20 even balls and leave to rest.
Next, make Fresh Tomatillo Salsa using tomatillos, cilantro leaves, mint leaves, serrano chile, fresh lime juice, salt, freshly ground pepper and minced white onion. All you have to do is combine these ingredients in a food processor and pulse until nearly smooth. Season the salsa as per taste, add it to a bowl and mix in the onion.
For the lamb, marinate it overnight in a blend of lime juice, chile powder, oregano, salt, pepper, and olive oil. Once out of the marinade and dry, brush the lamb with olive oil and grill it until lightly charred. Sprinkle chopped sage and rosemary on top and grill until the meat's thickest part clocks in at 135°F for medium-rare or 140°F for medium.
Pair this delicious lamb with a serving of grilled vegetables, which include tomatoes, poblanos, onion wedges, and scallions. Your homemade bacon fat tortillas are ready to serve with this scrumptious meal.
