Nourishing Vegetable Noodle Soup Recipe with a Twist

Lovers of savory flavors will definitely fall for this vegetable-loaded noodle soup recipe, spotlighting a fragrant base created with sautéed scallions, garlic, and ginger. The secret to keeping a delightful variety of textures lies in the thoughtful orchestration of adding the vegetables. Initially, carrots get a head start, followed by napa cabbage a few minutes ahead, and towards the end, bok choy is added, concocting a delightful array of consistencies. The key to keeping your noodles firm and not soaked in soup is to cook the vermicelli separately. Following this, give it a toss in toasted sesame oil before pouring the soup. This promises a fragrant touch to your nutritious dinner fit for all seasons. Toasted sesame oil is the most commonly found type in supermarkets, owing to the rich, nutty flavor it infuses due to the sesame seeds being toasted. However, it comes with a lower smoke point than canola and olive oil, making it better suited for dressings and marinades rather than cooking. When discussing leftovers, it’s best to store your noodles separately, ensuring they are well-oiled to keep away stickiness. Better yet, cook a new batch of noodles whenever you're ready to serve. Pair this soup with German wines that embody the perfect balance of tangy acidity, sweet, and aromatic fruitiness, the Mosel Kabinett, in particular, pairs delightfully well. The recipe involves 1 tablespoon of cooking oil, 6 scallions, 4 cloves of garlic, 2 teaspoons of fresh ginger, 1/4 cup of soy sauce, 1/4 teaspoon of dried red pepper flakes, 3.5 cups each of water and low-sodium chicken broth, 4 carrots, 3/4 pound of napa cabbage, 3/4 teaspoon of salt, 3/4 pound bok choy, zest of 1 lemon, 2 tablespoons of lemon juice, 1/4 pound of vermicelli noodles and 1 1/2 teaspoons of toasted sesame oil. The sauté pan gets a drizzle of cooking oil, followed by the scallions, garlic, and ginger. This needs a good stir till the fragrances are released. This is then followed by the soy sauce, red pepper flakes, broth, and water; brought to boil. Subsequently, the carrots are added, simmered, then the cabbage and salt, simmered again. Then, bok choy and lemon zest are added and simmered till the bok choy softens, followed by a splash of lemon juice. In a separate pot, vermicelli is boiled until it’s just done and drained, then given a toss with the sesame oil. Serve by placing some noodles in four bowls, topped by the soup.
