Whipping Up a Gorgeous White Bean Puree: Simple and Scrumptious

A beautifully smooth and flavorful white bean puree can be an enticing addition to any meal, be it as a delightful dip or a creamy base for protein. The heart of this puree lies in a delicious foundation of sautéed onions and garlic, gently fried with butter and a sprig of thyme before the beans get added.

A momentary simmer with chicken broth allows the distinct flavors to intertwine. After blending this concoction, you're presented with a silky, delectable puree. With just a pinch of seasoning and only six ingredients, it's an easy route to a marvelous dip or protein base.

Cannellini beans - also identified as white kidney beans, contribute a creamy, lightly nutty flavor, making them an ideal choice. However, if they're elusive on the shopping trip, Great Northern beans promise a comparable flavor and consistency. Other workable choices encompass navy beans and butter beans; essentially, anything labeled "white beans" would do just fine. Regardless if you choose canned, jarred or high-quality beans, the end result is always delicious.

This white bean puree harmonizes well with a myriad of crudites such as sticks of carrot or celery, fennel or bell pepper slices, asparagus or green beans, or wedges of tomato or radishes; even pita chips or pieces of crusty bread. Moreover, consider using it as a foundation for porchetta, braised lamb, or roast chicken, or layer it with roasted cauliflower or sautéed greens for a unique vegetable dish. Its versatility extends to thickening soups or pairing with pasta as a creamy sauce; just keep the seasoning in mind.

This puree recipe, in its original quantity, yields four servings. Included in the recipe are 3 tablespoons unsalted butter, one small finely diced onion, one minced garlic clove, a sprig of thyme, two 15-ounce cans of cannellini beans (drained and rinsed), one cup low-sodium chicken broth, plus kosher salt and freshly ground black pepper for seasoning.

Commence by melting the butter in a saucepan, stir in the onion, garlic, and thyme sprig, cooking over medium heat until the onion softens. This will be around 7 minutes. Then add the beans and broth, simmering over medium-high heat until the broth reduces by half, about 5 minutes. Remove the thyme sprig and transfer the bean mixture to a blender for a puree. Give it a final seasoning of salt and pepper before serving hot.

This puree has a shelf life of up to three days in the refrigerator. Please ensure gentle reheating before serving.
