One could hardly find a more refreshing way to beat the heat than with Aperol Spritz Pops. These indulgent treats, drawn from the iconic Aperol Spritz cocktail, are like a mini summer vacation with each bite. Incorporating Aperol, prosecco, club soda, and an added punch of fresh orange juice, they replicate the zest and spirit of the traditional beverage with a twist.

Taking advantage of the Aperol Spritz's relatively low ABV (alcohol by volume) that freezes easily, the creation of these Pops is a straightforward and fun process. The recipe maintains the characteristic ingredients of the spritz, casually introducing extra orange juice to boost the volume without upping the alcohol content.

Traditionally, the Aperol Spritz is garnished with an orange slice; the additional splash of orange juice in the pops not only boosts the volume but also lends an extra citrus zing, akin to the garnish on the original drink.

The Aperol mix keeps these pops subtly bittersweet, while the sparkling wine compensates with balancing citrus undertones. Prosecco is the key player, bringing forth its inherent fruity flavors such as apple and citrus, creating a perfect harmony with the slightly bitter Aperol. Most sparkling wines could technically fit the bill, but it's best to steer clear of varieties with yeasty notes such as Champagne.

Due to the alcoholic component, these delightful pops freeze to an icy consistency, making them easily enjoyable in bites. Optimum results are achieved by freezing the pops for a minimum of 12 hours before serving.

To make these delightful Aperol Spritz Pops, the following ingredients are needed:

  • 3/4 cup prosecco
  • 1/2 cup Aperol
  • 1/4 cup club soda
  • 1/4 cup orange juice
  • 6 ice-pop sticks.

Combine the prosecco, Aperol, club soda, and orange juice in a measuring cup equipped with an easy-pour spout. Pour the mixture evenly into six 3-ounce ice-pop molds (approximately six tablespoons each). Subsequently, cover with mold lids and insert ice-pop sticks. Freeze until solid, preferably for at least 12 hours.
