Here's a unique way to relish summer in all its glory: Margarita Pops! Imagine biting into a tart, citrus-infused icy pop that not only gives you a respite from the heat but also takes you on a nostalgic trip to your favorite beachside bar. These icy delights are inspired by the traditional Margarita cocktail, comprising key ingredients such as tequila and lime juice. They have a sprinkle of salt garnish, an homage to its classic cocktail counterpart.

Think of it as a frozen Margarita in a hand-held format. This reinvented dessert delivers a balanced blend of sweet, tangy, and fruity taste notes, topped with an unmistakable hit of real tequila. With these pops, you're essentially taking the sheer refreshment of a blended Margarita to the next level, transforming it into a portable treat that's ideal for summer soirees or pool-side lounging.

For the pops to have that mouthwatering Margarita vibe, the overall alcohol by volume (ABV) in the cocktail needs to be reduced. This recipe does the trick by replacing orange liqueur with fresh orange juice and adding some more water. To replicate the sweetness usually provided by orange liqueur, it utilizes a simple syrup.

Though Margarita Pops have a lower ABV than a traditional Margarita, the tequila's authentic flavor beautifully cuts through, thanks to the use of high-quality, 100% agave tequila. Un-aged tequila, such as blanco, is the perfect choice for this recipe.

For optimal results, keep the ingredients for the Margarita pop mix well-chilled. This reduces the freezing time. It also helps to strain any pulp from the lime and orange juice to ensure a smooth consistency and a sturdy pop.

Given the alcoholic content, these pops will achieve a icicle-like texture that's easy to bite in. To reach the desired consistency, it's best to let them freeze for at least 12 hours.

The recipe is simple: mix together 1/4 cup each of tequila, lime juice, orange juice, and simple syrup, along with 3/4 cup of water. After whisking the ingredients, pour the mixture evenly into six ice-pop molds. Put on the mold lids and insert the ice-pop sticks. Leave them in the freezer for a minimum of 12 hours until they solidify. Garnish with a dash of kosher salt, and your Margarita Pops are ready.
