A blast of refreshment now comes conveniently packed in a frozen popsicle stick with Mojito Pops. Mirror-images of a timeless Mojito cocktail, they bring together rum, sugar, lime, and mint to deliver that unique blend of sweet, tart, and minty flavors, in a more subtle yet equally delightful way.
Owing to freezers' inability to freeze alcohol at its normal freezing temperature, these Mojito pops come with an approximately 8% ABV - significantly less than what's found in your regular Mojito cocktail. Which isn't necessarily a bad thing, it simply makes the flavor softer around the edges, emphasizing the pop's sweet mint and tart lime notes.
The traditional Mojito demands fresh mints to be muddled with sugar. Here, in the case of Mojito pops, a mint-infused syrup introduces a sweet and herbaceous freshness, blending effortlessly with the liquid components delivering a minty burst with every bite.
Quality of ingredients and their state at the time of use are paramount. Chilled components are recommended as it reduces the time taken to freeze the Mojito Pop mix. Ensuring that the lime juice is free of pulp will facilitate a uniform texture throughout the popsicle. Opt for a white rum, premium in quality, balancing sweet with citrusy flavors. Avoiding overproof rum will prevent an excessive ABV, ensuring the Mojito pops freeze at the required consistency.
The Mojito pops freeze to an icy crunch that gives way easily with every bite. For optimal results, allow a freezing period of at least 12 hours.
To whip up your own batch of Mojito Pops, combine 2 ounces of white rum, 3 ounces each of lime juice and mint simple syrup and 6 ounces of water. Pour this mixture evenly into 6 ice-pop molds and insert the sticks. Cover with mold lids and freeze for at least 12 hours.
To make the mint simple syrup, bring to boil half a cup each of water and sugar in a saucepan on medium heat. Turn off the heat, add 3 sprigs of mint and let it infuse for 10 minutes. Use a fine wire-mesh strainer to separate the liquid and get rid of any solid parts. This is your flask of fresh mint syrup.
