The Spritz Revolution: Rethinking Prosecco with Good Guys’ Unique Cocktails

Michael McIlroy and Sam Ross, the co-owners of New York's acclaimed Attaboy bar, are stirring things up in the cocktail world with their adventurous takes on the time-honored spritz. Visitors anticipating their award-winning cocktail mixes have just received a worthy distraction: the newly opened neighbor, Good Guy’s.

Attaboy, a shadowy speakeasy, is famed for its daring renditions of traditional American cocktails. In distinct contrast stands Good Guy’s, a luminous space complete with a blond-wood bar, expansive windows framed by exquisite pillars, and a tempting menu of light fare and beverages.

"Spirited bars in places like Paris, Barcelona, and San Sebastián, where one can have a casual afternoon spritz, enjoy some snacks, and grab a to-go espresso – all in a relaxed, neighborhood setting – were our sources of inspiration," noted McIlroy.

This relaxed aesthetic is simple to replicate at home with the tried-and-true 3:2:1 spritz formula – three parts sparkling wine, two parts liqueur, one part soda water. This is the formula behind timeless drinks such as the Aperol Spritz and its numerous variants. McIlroy and Ross also encourage home mixologists to experiment with their original recipes – consider their Coffee Spritz, the herbal Como Spritz featuring Cynar and passion fruit syrup, or their intriguing Pineapple-Lambrusco Spritz with Italian sparkling red wine Lambrusco.

"People often associate spritzes with Prosecco," stated Ross, adding, "We aim to show how red sparkling wine could also shine within the same cocktail structure."

These surprisingly simple cocktails, perfect for summer gatherings, might just turn your guests' attention away from dinner. The various recipes offered by Good Guy's include the Long Legs, a well-balanced mix of pineapple juice, Campari, crème de cacao, fresh lemon, raspberry liqueur, and the berry-rich sparkling red wine, Lambrusco. This delectable concoction has been likened to an evolved version of fruit punch by the test kitchen.

Another refreshing number is a blend of slightly vegetable-like amaro Cynar, zestful passion fruit syrup, fresh lemon juice, and fruity Prosecco. For best results, combine equal parts of passion fruit puree and simple syrup in a blender to create your own version of the syrup.

Also on offer is the Espresso + Prosecco, a pleasant bitter-sweet and fruity blend of coffee amaro, pineapple juice, chilled espresso, vanilla syrup, and Prosecco. The laid-back cousin to the Espresso Martini, consider this for your next social gathering.
