Delicious Havarti-Stuffed Chicken Cutlets: An Easy Recipe

The recipe we're exploring today offers an enticingly simple approach to cooking four 6-ounce chicken cutlets, approximately 1/2 an inch thick. The ingredients needed for this delectable dish include: four thin slices of plain havarti cheese, four teaspoons of finely chopped thyme, 1/2 a cup of chicken stock, 1/4 of a cup of heavy cream, one tablespoon plus an additional teaspoon of Dijon mustard, a pinch of salt and freshly ground pepper, two large eggs, two tablespoons of finely grated Parmigiano-Reggiano cheese. You will also need all-purpose flour for the dredging process, and Extra-virgin olive oil for the frying action.

Start by preheating your oven to 350°. The first step involves carefully creating a small pocket (around about 4-by-3-inches) in the side of each chicken cutlet using a small knife. Proceed to inserting a slice of havarti cheese and spreading one teaspoon of the chopped thyme in each pocket. Do this softly to avoid tearing the cutlet.

Next, reduce the chicken stock and cream over moderately high heat until it reduces to about half a cup in a small saucepan. This should take roughly five minutes. At this point, you'll want to add the mustard and let it boil for about 30 seconds, stirring it a few times with a whisk. Finish by seasoning with some salt and pepper, then remove your saucepan from the heat.

Now, in a shallow bowl, beat the eggs. Follow this by beating in the Parmigiano-Reggiano. Meanwhile, keep the flour in a separate shallow bowl. Heat a quarter inch of olive oil in a large nonstick skillet. Before you proceed to cooking the cutlets, season them with salt and pepper. Dredge two cutlets in the flour, shaking off the excess, then coat with the beaten egg. Fry them over moderately high heat until they turn a light golden color, which should take about 2 minutes per side; then transfer them to a large rimmed baking sheet. Proceed to coat and fry the remaining cutlets in the same manner.

Finally, bake your chicken for approximately twelve minutes until just cooked through. Remember to reheat the mustard sauce and pour it onto the serving plates. Then place the cutlets on the sauce for a delightful presentation.
