When it comes to "dove" or "Paloma," as it's known in Spanish, it's not just about a delicate bird symbolizing peace. In Mexico, the name invokes thoughts of a classic highball that offers a refreshing blend of tequila, grapefruit soda, and lime juice, with just a touch of salt for balance.

Paloma first gained popularity thanks to the easy availability of its key ingredients, brought about by Squirt and Jarritos - two iconic grapefruit-flavored carbonated drinks. Squirt entered Mexico in 1955, after its founding in Phoenix, Arizona, in 1938. Meanwhile, Jarritos, a homegrown brand, introduced its own grapefruit soda around the same period.

The secret to Paloma's allure lies in its simplicity - it's quick to fix and effortlessly balanced. Constructed straight in the glass, this highball has the tangy edge of a sour. The sharp lime and semi-sweet grapefruit mingle beautifully with the vibrant and earthy note of blanco tequila.

Classic options like Squirt and Jarritos Graefruit bring unique twists to the drink. The Mexican version of Squirt offers a more intense, robust grapefruit flavor and has slightly more fizz compared to the sweeter and lighter Jarritos. But remember, both brands use cane sugar, unlike the U.S Squirt which uses high-fructose corn syrup to mellow the citrus punch. Their job? To sweeten, extend, and add zest to the cocktail.

A good quality blanco tequila aligns well with the Paloma, echoing its citrus touch while slicing through its acidity and sweetness for a crisp finale. Freshly squeezed lime juice and a tiny pinch of salt work harmoniously to bring equilibrium to the drink. The subtle salty undertone also serves to enhance flavor - emphasizing the citrus, softening bitterness, and bringing the tequila smoothly into the mix.

Ready to mix a Paloma? Here's the recipe:

  • 2 ounces tequila
  • 1/2 ounce lime juice, freshly squeezed
  • 4 ounces grapefruit soda
  • Pinch of salt
  • Lime wheel for garnish

Making the cocktail is straight-forward. First, add the tequila, lime juice, and a pinch of salt to your glass. Pop in some ice after that. Give it a good top with grapefruit soda, and don't forget to stir well. When it's nicely combined, finish with a garnish of lime wheel for that perfect Paloma experience.
