Delfina’s spaghetti pomodoro demonstrates just how much artistry can go into the creation of a deceptively simple dish. For greatness in pasta sauce, restraint is key, meaning there's no hiding behind lesser quality elements. The recipe calls for a handful of items: tomatoes, garlic, olive oil, basil, and pasta, culminating in a robust pomodoro that strikes the perfect balance between vibrant, tomato-forward flavor, mellow garlic notes, and a generous slick of olive oil that harmonizes the acidity.

The final dish's texture can alter subtly depending on the type of tomatoes used. Whole peeled tomatoes offer the ability to better control the consistency, while crushed ones must be monitored carefully during cooking, due to the propensity to reduce rapidly.

For pasta, Delfina opts for bronze-cut, a method that utilizes specific bronze dies to create slightly rough-textured spaghetti. This attention to detail helps the strands to release more starch while cooking, giving the rich tomato sauce more grip.

Enhance your meal by perfectly coupling it with a low-tannin Italian red wine, like Vietti Barbera d’Asti Trevìe, to complement the zestiness of the pomodoro. This recipe crafted by Craig Stoll and supplemented by the writings of Craig Ruff showcases the true power of "less is more".

Ingredients include peeled whole plum tomatoes (Bianco DiNapoli is advised), garlic cloves, kosher salt, extra-virgin olive oil, black pepper, red pepper flakes, fresh basil and spaghetti. Topping your dish with freshly-grated Parmigiano-Reggiano and a drizzle of olive oil will add a final touch of Italian authenticity.

Follow the steps to assemble the dish by crushing the tomatoes while ignoring the seeds, forming a garlic paste with salt, gradually adding the tomatoes to the pot along with pepper and additional salt, and slowly simmering the sauce till it's thick and reduced. Freshly torn basil gives it a final burst of flavor. Partially cooked pasta is added to the simmering sauce, resulting in a beautifully coated, al dente spaghetti ready to be served directly from the pot.

Cooled down leftovers of the sauce can be refrigerated in an airtight container for not more than four days or can be preserved in the freezer for two months. So, you can experience the magic of Delfina’s spaghetti pomodoro over and over again!
