Bringing a fresh splash of piña colada to the European tradition of aperitivo, the inclusion of Sarti Rosa, a rich, fruit-loaded expression from the Campari Group, is turning heads in Italy and beyond in 2022. Housing under its portfolio popular liquors like Aperol, Campari, and Cynar, Campari has now unveiled an even more intriguing arrival: Sarti Rosa.

Radiating a lively blush, Sarti Rosa is a delightful symphony of Sicilian blood orange, mango, and passion fruit flavors. Set apart by its natural sweetness and tangy charm, which echoes fond reminders of sour candy, Sarti Rosa introduces a tantalizingly tropical end note to the bitterness of its Aperol and Campari counterparts.

The allure of Sarti Rosa accentuates when it is employed in the equally iconic spritz cocktail. Its fusion with Prosecco and a dash of club soda, topped off with a slice of lime, works harmoniously to transport you to a relaxing, sandy beach.

This innovative addition to the libation landscape, christened after the Bologna-based beverage firm Casa Luigi Sarti & Figli that was procured by the Campari Group in 1995, was launched across America in July of 2026. The vivacious newcomer has since won hearts at bars nationwide, amassing an enthusiastic fan following.

Evidence of this newfound popularity can be seen at Miami's Bagatelle, which has eagerly incorporated the Sarti Spritz into its Spritz Sessions menu. Likewise, when the Sarti Spritz was featured in July at Uva, a well-loved spot in New York City, it was met with a barrage of positive responses on social media.

Dominic Sala, the corporate beverage manager at Florida’s American Social Bar & Kitchen, proclaimed the statewide launch of the Sarti Spritz as a thrilling success. The refreshing drink has been adopted by numerous restaurants, relished by their patrons, and seems set to stay.

Sala's suggested preparation involves the timeless spritz formula - three portions of Prosecco, two of Sarti Rosa, and one of soda water, added one after the other into an ice-filled tall wine glass, and finished off with a lime slice garnish. The simplicity of this recipe ensures that the drink retains its crisp, refreshing character without sacrificing Sarti Rosa's unique flair.

Of course, cocktail aficionados are encouraged to tweak this classic formulation to fit their own tastes. Substitute the lime garnish with a slice of pink grapefruit, blood orange, or even dragon fruit for a playful twist. For a more robust drink, favor Prosecco over soda, and for those with a sweet tooth, consider adding more liqueur.

Using a brut Prosecco with a hint of texture-defining soda at the end will balance out the innate sweetness of Sarti Rosa. Sala specifically advocates for La Marca, a DOC Prosecco known for its sharp lemon and honeysuckle undertones, diluted with a high-quality club soda such as Q Mixers Club Soda for an effervescent finish and tasteful infusion of saline flavors.

The Sarti Spritz, with its inviting tropical allure and gentle bitterness, cuts a niche of its own among traditional aperitivi like Aperol or Campari. It's a balanced and refreshing drink with a universal appeal, and is fast becoming a permanent addendum to contemporary cocktail lists.

Sarti Spritz appeals to regular spritz drinkers, and may well draw attraction from consumers generally averse to spritz, according to Sala. The tropical blend of passion fruit, mango, and blood orange presents a broader appeal than simply acting as an alternative to Aperol or Hugo variants.

Zach Poelma, senior vice president at Southern Glazer’s Wine & Spirits, concurs, reflecting, "The Sarti Spritz is an alternative for customers seeking something a tad sweeter and less bitter than the Aperol Spritz,”

The recipe features three ounces of Prosecco, two ounces of Sarti Rosa, and an ounce of club soda or sparkling water mixed gently in a half-filled large wine glass with ice. Gracing the rim with a slice or wheel of lime makes the perfect garnish for this delightful novelty.
