Unveiling a unique culinary gem from the sun-kissed shores of Goa, a region nestled along the southern coastline of India amidst thriving coconut palms and bountiful fresh seafood - a scrumptious fish stew. Traditionally, Goans prefer to use a region-specific flatfish known as pomfret, served along with an ample portion of rice. But for this version, a commonly found substitute, sole, has been suggested. Pomfret, if you manage to find it, makes for an equally delightful alternative.
Finding pomfret in regular markets might come as a challenge. However, some Indian and Asian grocery stores or even online gourmet groceries do offer it in frozen form. When on a pomfret hunt, you're likely to strike luck with the silver, or white pomfret, depending on your location.
The delectably creamy and spicy flavor profile of this Goan stew is wonderfully complemented with beer or a bottle of tart white wine. An ideal wine would be one robust enough to hold its ground amongst the coconut milk and chili heat. A Vouvray or perhaps another Chenin Blanc variant from France's Loire Valley can be tried.
The recipe provided has been created keeping its original yield. While the amount of ingredients scales automatically, the cooking steps and times do not change. Note, perfect scaling isn’t always possible with every recipe.
Serves 4 Ingredients: 2 pounds sole fillets, cut into 1-inch pieces1/4 cup lemon juice (from about 1 lemon)1 1/4 teaspoons kosher salt, divided2 garlic cloves, smashed4 teaspoons fresh ginger, chopped1 cup unsweetened coconut milk1 tablespoon ground coriander1 teaspoon ground cumin1 teaspoon brown sugar1/2 teaspoon freshly ground black pepper1/4 teaspoon turmeric1/8 teaspoon cayenne pepper3 tablespoons cooking oil1 onion, chopped1 tomato, chopped4 jalapeño peppers, seeds and ribs removed, minced3/4 cup water
Marinate the sole fillets in a glass or stainless steel container with lemon juice and 1/2 teaspoon salt for a minimum of 10 minutes. In a blender, blend the garlic, ginger, coconut milk, coriander, cumin, brown sugar, black pepper, turmeric, and cayenne to a smooth paste.
In a large saucepan, heat the oil over medium heat. Add the onion and cook until golden. Following this, include the tomato and continue to cook until soft. Now add the spiced coconut blend, jalapeños, water, and the rest of the salt. Bring this mix almost to a simmer, stirring frequently.
Finally, add the marinated fish along with a tablespoon of the marinade, and bring to simmer. Continue to cook until the fish is done, about 1 to 2 minutes.
