Packed with bursting flavours and a delightful crunch, this unique, innovative pomegranate salsa recipe is a creation of famed Los Angeles chef, Wes Avila. This salsa is a symphony of charred onion and pepper, fresh herbs, a tangy sherry vinegar reduction, all harmonized with pomegranate arils and chopped pistachios. It's a versatile dish, perfect as a dip for tortilla chips or as a tangy topping for chicken or fish.

Getting those lovely arils out of the pomegranate can be daunting, but it's not so hard if you follow some easy steps. Begin by slicing off the top of the pomegranate, then gently score along the fruit's natural sections. Once done, use your hands to divide the fruit along the scored lines into smaller pieces revealing the easily accessible arils. You can either gently tease them out with your fingers offline the fruit or smack the pomegranate exterior with a spoon to discard the arils with minimum fuss.

The pomegranate arils give the salsa an extra freshness whilst the chopped pistachios add a welcomed crunch. When it comes to the recipe, it delivers 8 servings. The ingredient measurements are conveniently scalable, although the cooking time and steps stay unaffected. Just bear in mind that certain recipes may not scale up or down perfectly.

The recipe ingredients included: 6 tablespoons of sherry vinegar, 1 medium red onion cut crosswise into 1/2-inch-thick rounds, 1/4 cup extra-virgin olive oil, 1 fresh serrano chile, couple of thyme sprigs, 1/4 teaspoon kosher salt, some black pepper, 1 1/2 cups pomegranate arils, 1/4 cup chopped roasted pistachios, 2 tablespoons each of finely chopped fresh chives and flat-leaf parsley.

The vinegar is brought to a boil and reduced by half. While onion slices are brushed with oil, they are pan cooked along with chile, thyme, salt, and black pepper until charred. Next, the onion and chile are chopped and stirred with pomegranate arils, pistachios, chives, parsley, vinegar reduction, and remaining oil. The dish can be stored in a refrigerator in an airtight container up to three days.
