Considered a hidden treasure of Mediterranean cuisine, Fregola, a gem originating from Sardinia, Italy, unveils a novel way of enjoying a pasta dish. This revelation is brought to you by the ingenious creativity of Chef Jeff Banker, who enhances the flavors by roasting cherry tomatoes and infusing them with the pasta. The process of oven-roasting renders the tomatoes even sweeter, amplifying their taste and offering them a deeper flavor.

Red onions successfully pass through two cooking stages - grilled and baked with a touch of balsamic vinegar - promising an unexpected layer of sweet complexity to the dish, exacerbating the tangy and acidic overtones of the vinegar. The quintessential pasta Sardinians lovingly call "fregula" is essentially semolina pasta shaped into tiny, irregular spheres which are then toasted to bring out a distinct nutty flavor. Although historically hand-formed, commercial production now often employs machines, but some producers remain faithful to the traditional creation technique.

Fregola can be prepared in a variety of ways, either in a pot of boiling water like most pastas, or directly simmered in a sauce or broth. One can even resort to the 'risottata' technique, gradually adding liquid and stirring until the pasta absorbs it - just like a classic risotto.

Let's delve into the specifics of this delightful recipe. You can expect approximately eight servings from the original. For the tomatoes, you will need 1 pint of cherry tomatoes, 2 tablespoons of extra virgin olive oil, a couple of sprigs of rosemary and thyme, along with kosher salt and freshly ground black pepper to taste. For the onions, you should have at hand 2 medium red onions, 1/4 cup of extra virgin olive oil, kosher salt, freshly ground black pepper and 1/4 cup of balsamic vinegar. Lastly, for the fregola, you'll need 3 cups of fregola, 1/4 cup of balsamic vinegar, 3 tablespoons of extra virgin olive oil, kosher salt, freshly ground black pepper, and 1 cup of torn basil leaves.

The cooking process begins with roasting the tomatoes in the oven at 300°F for around 40 minutes after tossing them with the olive oil. They're ready when they appear to burst. Add herbs, bake a little more and then increase the oven temperature to 350°F. In parallel, grill the onions over medium-high heat until nicely charred, yet still crisp in the core. Immerse the grilled onions in a separate dish of vinegar and oil, bake at the same temperature for 20 minutes and chill them later in the liquid before chopping. For preparing the fregola, cook it until 'al dente', then add it to the cooked onions, tomatoes and their respective liquid, stir in vinegar, olive oil and season accordingly. Top the dish off with fresh basil before serving.

The recipe is conveniently flexible, allowing you to prepare everything up to the third step a day prior. Just remember to serve it at room temperature to enjoy the beauty of Sardinian cuisine at its best.
