Exquisite Trout Tartare with Yuzu Tobiko and Puffed Rice Recipe Revealed

Renowned Chicago chef Larry Feldmeier unveils his tantalizing trout tartare recipe, an innovative dish offering a perfect balance of vibrant, bright flavors and intriguing textures. The recipe features fresh trout, rich in a buttery consistency, paired with a delightful symphony of fennel, red onion, yellow bell pepper, and cucumber. These ingredients, when brought together, are then painted with a charismatic dressing enlivened by lime, ginger, and yuzu, giving the dish a memorable flavor profile.
What takes this dish to the next level are the golden yuzu tobiko and the crispy puffed rice. Tobiko, a variant of flying fish roe prepared with yuzu juice, provides a bright, tart flavor, which in combination with the visual appeal of the golden hues makes it irresistible. This recipe was initially developed to serve four. However, if you desire, the ingredient quantities can be adjusted while ensuring that cooking times and steps remain constant. Please be aware, not all recipes scale flawlessly.
This dish is prepared in stages. First, is the creation of the Puffed Rice, where pure black wild rice is fried in canola oil until it is perfectly puffed and floats to the surface, which usually takes around 30 seconds. Once the fried rice is cooled and stored, you can start preparing the Trout Tartare and Fennel Remoulade.
For this, a medium metal bowl pre-chilled in a freezer would be used. While combining the different flavorful components, be cautious about checking the trout for any skin, bones or discolored meat as these should be discarded immediately. The mixture should be gently stirred in mayonnaise dressing, then covered and refrigerated for at least 15 minutes.
Following that, a ring mold is filled with the marinated tartare mixture. Atop the mixture, 1 teaspoon yuzu tobiko is added on the left side and 2 teaspoons Puffed Rice on the right. In the center, where the tobiko and rice meet, 1 teaspoon of both shaved fennel bulb and picked fennel fronds and 1/2 teaspoon of marigold petals are placed. This is gently molded and removed, and the plate is now ready to be served.
A recommendation for this preparation is to make the puffed rice up to three days in advance and store it in an airtight container so that it maintains its crunchiness.
