Hearty Vegetable Soup Bursting with Ancient Grains

For a heartwarming bowl of goodness, laden with nutritious ancient grains, let's dive into one recipe that wouldn't disappoint. This vegetable soup, generously packed with grains like pearl barley, short-grain brown rice, and bulgur, is sure to leave you satiated and hooked.

Take a medium saucepan and add half a cup of pearl barley along with four cups of water. Let it boil. Then, lower the heat and let it simmer, covered, until the grain gets tender - this would be around 35 minutes. After draining the water, bring the barley back to the pan and maintain it covered. Then, in a separate saucepan, repeat this process with half a cup of short-grain brown rice.

Next, place the bulgur in a medium-sized bowl and cover it with one cup of hot water. Let it stand till the water gets fully soaked up which will take about 10 minutes.

In a passage from cooking grains to preparing the soup, heat one tablespoon of light olive oil in a large, heavy pot. Drop in three stemmed, seeded, and broken ancho or dried mulato chiles, one large thinly sliced onion, and two halved garlic cloves. Stir occasionally over a moderately high flame till the onion gains a light brown hue, which should take about five minutes.

Now, pour two quarts of vegetable broth into the pot along with one-and-a-half cups of canned diced tomatoes, six sprigs of cilantro, and one teaspoon of ground allspice. Don't forget to season it with one tablespoon of salt and a pinch of pepper. After bringing it to boil, cover the pot and simmer over low heat for 45 minutes. Once it cools down briefly, turn it into a smooth soup using a blender and return it to the pan.

Time to introduce more flavors and textures! Add half a pound of thinly sliced shiitake mushrooms without stems, one can of drained and rinsed black beans, and one each of finely diced medium carrot, zucchini, and parsnip to the pureed soup. Let it reach a boil, cover it and simmer on low heat for about 20 minutes.

Now, back to our grains. Integrate the cooked barley, brown rice, and bulgur into the soup, seasoning it again with salt and pepper. Ladle this hearty soup into bowls and complete the garnishing with half a cup of salted roasted pumpkin seeds and one-fourth cup of chopped cilantro. Voila! Your nutritious vegetable soup, crammed with ancient grains is ready.

This serving is perfectly balanced with 368 calories, 14 grams of fat, 1.4 grams of saturated fat, 29 grams of carbohydrates, and 11 grams of fiber.
