Those who fancy a flavorful and moist tuna steak will rejoice at this uncomplicated, yet delightful dish. Raid your pantry for the following ingredients: 1/2 cup of soy sauce, a 1/4 cup of mirin, a small-sized shallot (sliced thinly), 1/2 jalapeño (chopped and sans seeds), two tablespoons of fresh orange juice, a 3-inch strip of lemon zest, one tablespoon of freshly squeezed lemon juice, a teaspoon of sugar, an additional 1/4 teaspoon of ground coriander, and a tablespoon of vegetable oil. You'll also need four tuna steaks, each weighing about 4-ounce and an inch thick.

To kick-off the preparation, combine the soy sauce, mirin, shallot, jalapeño, orange juice, zest and lemon juice, sugar, and coriander into a small saucepan. Allow the mixture to simmer until it's reduced to half its volume, which should take about eight minutes. Once it's ready, strain your homemade sauce.

Meanwhile, heat your vegetable oil in a spacious, nonstick skillet until it starts to glisten. Sprinkle your tuna steaks with salt and pepper to taste then swiftly cook each side on high for a single minute. Once cooked, transfer your tuna to a plate and let it rest for about a minute. Cut into thick slices and ensure you serve it while still warm drizzled with the special citrusy soy sauce you’ve prepared.

Does the dish make you conjure up thoughts of beverages that complement the nuances of the tuna's flavors? Consider uncorking a bottle of passion fruit–scented orange wine for an edgier dining experience. Alternatively, if your palate leans towards more accessible flavors, match your sumptuous tuna steak with a ripe, melon-scented Chenin Blanc–Viognier blend for a harmonious meal.
