You can now cater an irresistible home-cooked dinner using our simple recipe for roast chicken with shallot-miso butter. The recipe uses 8 medium shallots, with 7 halved lengthwise and one minced, mixed with 2 tablespoons of extra-virgin olive oil. As per your taste, season with salt and freshly ground pepper.

The shallot-miso butter, heart of the dish, consists of 1/4 cup of white (shiro) or red (aka) miso, softened with 4 tablespoons of unsalted butter. To this, add the minced shallot, 2 tablespoons each of minced flat-leaf parsley and finely chopped chives, and 2 teaspoons of finely grated fresh ginger. Create a paste-like consistency by combining 3 tablespoons of the miso butter with 1 tablespoon of all-purpose flour.

The recipe calls for 4 pounds of chicken - a combination of breasts and whole legs with skin. To prepare, separate the skin from the chicken by gently applying pressure with your fingers. Then, spread the remaining miso butter evenly under the loosened skin. Season the chicken to taste and transfer to a large roasting pan oiled and seasoned with the halved shallots. Roast it in the preheated oven at 425°F at the center, ensuring that the chicken skin gets evenly browned.

Cook the chicken for about 45 minutes until the meat juices run clear when pierced with a knife. After cooking, you should remove the chicken and shallots from the oven and loosely cover them with foil.

Next, consider creating a delectable gravy from the pan juice and low-sodium chicken broth. Pour the pan drippings into a small saucepan, skim off excess fat, and add the chicken broth. This should be done over high heat, while scraping off the browned bits from the bottom and sides of the roasting pan. Once this mixture starts to boil, whisk in the miso-flour paste and simmer for around 2 mins to enhance the flavors and thicken the gravy.

As the perfect accompaniment to your chicken, pour the gravy into a bowl and serve it immediately. Conveniently, the shallot-miso butter can be refrigerated if prepared prior, letting it soften before usage.
