Sensational Sesame Noodles: How to Make Them at Home

Best known for their originality, this sesame noodle recipe delivers four servings, following a process that ensures perfection despite automatic ingredient adjustments. Remember however, that despite scaling the quantity, the cooking time and method will stay the same.
Here is what you will need for this splendid dish:
- 1 tablespoon of neutral-flavored oil
- 12 ounces of thin egg noodles. You can use Chinese egg noodles or yanghun noodles
- 1 cup of Chinese sesame paste
- 1 block of furu, which is fermented tofu, from a 13-ounce jar
- 4½ tablespoons of toasted sesame oil
- ¼ cup of light soy sauce
- 3 tablespoons of sugar
- 2½ tablespoons of Chinese black vinegar
- ½ tablespoon of dark soy sauce
- ½ tablespoon of Sichuan peppercorn oil
- ½ tablespoon of salt
- 1 tablespoon of mayonnaise, Kewpie is preferred
- ¼ cup of water
- Sliced scallions, for serving
- Chile oil, for serving
- Toasted sesame seeds (crushed using a mortar and pestle), for serving
To begin, heat the oil in a small skillet until it starts to shimmer. After cooling, transport it into a medium-sized bowl. Follow the instructions provided on the noodle packet for its cooking process. Once you've drained the noodles, combine them with the oil in the bowl or on a small rimmed baking sheet then cover and put inside the refrigerator until they have cooled.
Whisk together the furu and sesame paste in a small bowl until the mixture is smooth. Then add the toasted sesame oil, salt, light soy sauce, Sichuan peppercorn oil, black vinegar, sugar, and dark soy sauce, continuing to whisk until the mixture is creamy. Add the mayonnaise next, then slowly add water, ensuring the mixture maintains its silky texture.
Finally, share the chilled noodles into bowls drizzling the sesame sauce on top followed by the garnishing with chile oil, sliced scallions and ground sesame seeds. Enjoy your homemade delicious sesame noodles!
