This recipe for Alaskan Cod fillets coated in a parmesan crust can provide a taste-test of the ocean right in your kitchen. To begin, gather together the following ingredients: a quarter cup of freshly grated Parmesan cheese (save some for garnish), one and a half tablespoons of mayonnaise, a teaspoon of fresh lemon juice, a hint (1/8 teaspoon each) of dried basil, dried oregano and onion powder, kosher salt, pepper, and four Alaska Cod or Halibut fillets, each weighing in at about 4 to 6 ounces. Also on your list should be a tablespoon of unsalted butter, a teaspoon of extra-virgin olive oil and two medium zucchinis, each sliced thinly using a mandoline.

Kick off your culinary adventure by positioning your oven rack six inches from the heat and preheating your broiler. To help with cleanup later, line a rimmed baking sheet with foil. Next, arrange the fish fillets on the prepared baking sheet. Then, in a small bowl, blend the parmesan, mayonnaise, lemon juice, dried herbs, and onion powder. After that, season with a dash of salt and pepper. Slather this creamy mixture onto the fillets preparing them for the oven. After three minutes under the broiler, or once the topping is bubbly and golden, decrease the oven's heat to 300°F. Continue cooking the fish for another 3-5 minutes until it's cooked to perfection.

The final step involves the zucchini. In a large nonstick skillet, allow the butter to melt into the olive oil. Subsequently, cook the zucchini, occasionally stirring until they start to soften. This should take approximately 2 to 3 minutes. Season them with salt and pepper as well, then transfer onto plates. Crowned with the fish and sprinkled with additional Parmesan, your dish is now ready to serve. Enjoy this cheesy and delightful dinner straight from Alaska's coast.
