A pro-tip while preparing in bulk: while the ingredient proportions can be adjusted, remember that the cooking time remains the same. Not all recipes can be perfectly scaled.
Here's the full recipe serving four people:
- Olive oil for greasing the dish
- 9 to 12 lasagna noodles
- 1 cup ricotta cheese
- 1 large egg
- 1/4 cup grated Parmigiano-Reggiano
- Zest of 1 lemon
- 1/2 teaspoon kosher or sea salt, to taste
- Freshly ground black pepper, to taste
- 24 ounces of tomato sauce
- 2 cups of shredded or chopped cooked chicken
- 16 ounces of grated mozzarella cheese
Preheat your oven to 375°F and oil a 2-quart baking dish. Cook lasagna noodles as per the instructions on the package until they're al dente. Once done, cool them under cold water and set them flat.
In a separate bowl, mix the ricotta cheese, egg, Parmigiano-Reggiano, lemon zest, salt, and pepper. Now that you're setup, spread a thin layer of tomato sauce at the bottom of your baking dish and place three to four lasagna noodles lengthwise over it.
Next, build your layers, commencing with one-third of the remaining tomato sauce spread over the lasagna noodles. Add half of your ricotta mixture, followed by half of the chicken. Sprinkle a third of the mozzarella cheese to top it off. Repeat this pattern: noodles, sauce, ricotta mixture, chicken, and mozzarella cheese. Finish with a final layer of lasagna noodles, topped with the rest of the tomato sauce and mozzarella cheese.
Bake the lasagna for about 45 minutes, or until the top layer of cheese is melted and has a golden-brown color. Once done, let it cool for around 10 to 15 minutes before serving. Now, you're ready to savor your non-traditional and delectable chicken lasagna. Bon appétit!
