Special Kwanzaa Dinner: The Gospel Bird's Caribbean Twist

Derived from the South, a region where the chicken has earned a special place at Sunday dinners, scholar Jessica B. Harris has developed a distinctive recipe to feature at her Kwanzaa dinner table. She refers to it as "centering on chicken", and completes this dish by adding a delicious Caribbean twist with a mango-rum glaze.

The mango-rum glaze, with Major Grey's mango chutney as its core ingredient, beautifully adorns the chicken, enhancing its moisture retention during the bake. This same glaze transforms into a sumptuous sauce for the final dish.

Emerging in the late 19th century, Major Grey's chutney is rumored to be named after a British officer who served in India during the Raj. Despite the questionable authenticity of its back story, the sweetness of this chutney was a sure-fire winner with British taste buds. It is prominently known as the inaugural mango chutney exported from India by Merwanjee Poonjiajee, also popularly known as Sun Brand. The iconic flavors of this chutney are - vinegar, onion, tamarind, and lime - which perfectly balance and accentuate the sweetness of the mango.

The recipe has been calculated to yield four servings, maintaining the original quantities of ingredients. It's crucial to consider that while ingredient quantities are adaptable, cooking steps and times remain the same, as not all recipes can be perfectly scalable.

The following items will be needed: A teaspoon of poultry seasoning (alternatively a combination of 1/2 teaspoon thyme, 1/4 teaspoon sage, and 1/4 teaspoon ground allspice), a teaspoon of kosher salt, 1/2 teaspoon of freshly ground black pepper, 4 large boneless chicken breasts, a tablespoon of extra-virgin olive oil, 1/4 cup of Major Grey's mango chutney, 1/4 cup of mango nectar and 2 tablespoons of dark rum.

Begin by preheating the oven to 500°F. Combine the poultry seasoning, salt, and pepper in a small bowl. Rub the chicken with the olive oil and dry seasonings in a baking dish and let it marinate for half an hour. Bake the chicken for 15 minutes, then remove from the oven, leaving it on. While the chicken is roasting, blend the chutney, mango nectar, and rum in a food processor until puréed. Using 3 tablespoons of the mango glaze, brush the chicken and bake for around 10 more minutes or until browned and fully cooked. Serve the chicken on plates, accompanied by any remaining glaze for an additional flavor boost.
