Zucchini Soup Showcases Its Versatility in These Iconic Recipes
- May 26, 2026
Zucchini is much more than a simple summer squash. It can star in soups ranging from the silky and delicate, to brothy and bright, even to rich, deeply flavored creations that are spiced and savory. These hand-picked recipes exhibit the remarkable versatility of zucchini, from chilled green soups rich with fresh herbs and crème fraîche, to hearty stews drawing inspiration from the flavors of Korean soondubu jjigae and Provençal pistou. Such globally renowned chefs as Grant Achatz, Eric Ripert, and Vishwesh Bhatt each offer their own take, transforming zucchini into elegant soups suitable for any season. Whether served ice-cold during sweltering summer days or heated alongside crispy bread, these dishes illustrate the justified spotlight the humble zucchini earns on your table.
"These recipes were created from seemingly mundane circumstances," states chef Vishwesh Bhatt. He recalls how a mix-up from his nephew, who confused zucchini for cucumbers, led to a delightful creation. “The resulting cold cucumber soup, with its tangy buttermilk broth, was a happy accident.”
Both Achatz and Bhatt's soups focus on preserving the zucchini's natural elements. Achatz avoids potentially overpowering ingredients like heavy cream and excessive herbs, instead highlighting the squash's inherent silky texture by pureeing it. The zucchini is sparked with subtle flavors from onion and garlic additions, creating a beautifully balanced dish.
Meanwhile, Michael Anthony, executive chef from Gramercy Tavern, masterfully crafts a vibrant puree from sautéed alliums, zucchini, spinach and fresh herbs. To secure the soup's bright green color while hastening the chilling process, an ice bath is employed.
Inspired by childhood restaurant visits and Korean cuisine, sommelier Annie Shi's comforting tofu-and-vegetable stew is a streamlined, weeknight approach to traditional soondubu jjigae. Shi creates complex umami flavors using Korean fermented soybean paste and quick dashi made from dried anchovies, shrimp, and kelp.
Across the 10 recipes, distinct international flavors come forward. Celebrated chef and author, Alain Coumont and talented newcomer Justin Cogley both add unique takes on the traditional veggie soup by incorporating barley and alternative herb blends to create unexpected and satisfying results.
As these recipes exemplify, zucchini deserves a starring role in your kitchen. Its flexible nature makes it possible to explore a wide range of flavors and textures, pointing to the zucchini's ability to sparkle in any dish.
